Potato Salad Recipe
In the world of comfort food, few dishes hold the same level of universal adoration as a delicious potato salad. Creamy yet chunky, and packed with crunchy vegetables, our potato salad is an ideal side dish.
Whether it's a side at summer picnic, a family gathering, or a simple weeknight dinner, potato salad has an uncanny ability to bring people together {and that’s one of our favorite things to do}. This potato salad will be a hit on your Easter lunch table - and at Spring garden party, Summertime cookout, and more.
A Few Key Ingredients:
- Yukon Gold Potatoes: This type of potato is creamy and buttery, just perfect for potato salad.
- Hard Boiled Eggs – A traditional potato salad ingredient, mashed hard boiled eggs adds depth of flavor {and texture} to the otherwise creamy salad.
- Paprika – Paprika adds not only a pop of color to this dish, but also mild heat.

Potato Salad
Serves 10-12
Ingredients:
- 5 lb. Yukon Gold Potatoes, peeled and diced
- 5 Hard Boiled Eggs, divided
- 1 cup Mayonnaise
- 1/2 cup of onion, finely chopped
- 1/2 cup of celery, finely chopped
- 1 teaspoon Apple Cider Vinegar
- 2 teaspoons sugar
- Salt and Pepper, to taste
- Paprika, to garnish
Instructions:
- Place potatoes in a large pot and cover with water.
- Bring water and potatoes to a boil and continue to boil for 20 - 25 minutes, until fork tender.
- Drain potatoes and spread them on a cookie sheet to cool.
- In a large bowl, mash 3 hard boiled eggs with a fork, and add the remaining ingredients stirring until blended.
- Gently fold in potatoes.
- Season to taste with salt and pepper.
- Place salad in serving bowl.
- Slice the remaining 2 eggs.
- Garnish the top of the salad with eggs and paprika.
