Fresh Tomato Tart Recipe

One way we like to welcome the sunny season is with a beloved Southern classic: a fresh tomato tart, full of layered juicy tomatoes fresh from the market {or, our home gardens} and seasoned with a simple mix of spices. A delicious mix of tangy tomatoes, fragrant herbs, creamy cheese, and flaky pastry, a tomato tart is a celebration of summer's bounty.

In Tallahassee, where we live, there are at least 3 farmer’s markets a week, and one of our favorite items to pick up is fresh, juicy, locally grown tomatoes. There's no better way to savor the season's freshest picks! Whether you're a seasoned chef or a novice in the kitchen, this recipe will transport you to the sunny fields of the South with each savory bite.  

This timeless recipe is just perfect for leisurely picnics, gatherings on the patio, or simply for savoring a taste of the season in the comfort of your own home.  

 

  

A Few Key Ingredients for Fresh Tomato Tarts 

 

  • Tomatoes – For smaller slices, try roma or Campari tomatoes, or for bigger ones, try beefsteak or heirloom.  
  • Seasoned Salt – A few dashes of this herb and spice mix takes the tart to the next level. 
  • Pre-made pie crust pastry dough – Using a pre-made pie crust dough makes this recipe quick and easy, but if you’re feeling up to it, a homemade one works perfectly as well. 

    Tips for Preparing Fresh Tomato Tarts 

     

    Follow these tips to make preparing your Fresh Tomato Tart easy as pie {or tart}.  

    • Choose medium-ripe tomatoes that are slightly firm to the touch. 
    • Wash your tomatoes before slicing them, and pat dry. 
    • Sharpen your knife before slicing the tomato so you can achieve even, clean slices.

    Fresh Tomato Tart Recipe

     

    Serves 6, Yields 1 Tart 

    Ingredients: 

    • 1 8-inch or 9-inch pie pastry dough, unbaked 
    • 3 large ripe tomatoes 
    • Seasoned Salt 
    • Freshly ground pepper 
    • 1 tablespoon Chopped fresh or 1 teaspoon dried basic 
    • ½ cup mayonnaise 
    • ½ cup freshly grated parmesan cheese 
    • 1/8 teaspoon garlic powder 
    • ¼ cup cracker crumbs 

    Instructions: 

    1. Preheat oven to 400 degrees. 
    2. Line a 10-inch tart pan with pie pastry. 
    3. Prick crust and bake according to pie pastry package directions. Cool. 
    4. Slice tomatoes and place in layers in tart pan. 
    5. Sprinkle with seasoned salt, pepper, and basil. 
    6. In a small bowl, combine mayonnaise, parmesan cheese, and garlic powder. 
    7. Spread mixture over tomatoes. 
    8. Sprinkle cracker crumbs over the top. 
    9. Bake tart for 15 minutes or until top is golden brown. 
    10. Enjoy!
