In Tallahassee, where we live, there are at least 3 farmer’s markets a week, and one of our favorite items to pick up is fresh, juicy, locally grown tomatoes. Fresh Tomato Tart Recipe
Serves 6, Yields 1 Tart
Ingredients:
- 1 8-inch or 9-inch pie pastry dough, unbaked
- 3 large ripe tomatoes
- Seasoned Salt
- Freshly ground pepper
- 1 tablespoon Chopped fresh or 1 teaspoon dried basic
- ½ cup mayonnaise
- ½ cup freshly grated parmesan cheese
- 1/8 teaspoon garlic powder
- ¼ cup cracker crumbs
Instructions:
- Preheat oven to 400 degrees.
- Line a 10-inch tart pan with pie pastry.
- Prick crust and bake according to pie pastry package directions. Cool.
- Slice tomatoes and place in layers in tart pan.
- Sprinkle with seasoned salt, pepper, and basil.
- In a small bowl, combine mayonnaise, parmesan cheese, and garlic powder.
- Spread mixture over tomatoes.
- Sprinkle cracker crumbs over the top.
- Bake tart for 15 minutes or until top is golden brown.
