White Chicken Chili Recipe

As the hustle of back-to-school season greets us and the crisp autumn air is near, one of our favorite go-to cozy recipes is White Chicken Chili. Nothing says relaxing after a long day than with a bowl full of delicious and warm chicken chili. This simple yet satisfying recipe is perfect for those busy weeks of work and school when all you want to do when you get home is warm up your yummy bowl of chili.  
 
When we think of the perfect cozy autumn chili, we immediately picture this flavorful dish. It’s full of fresh ingredients and hearty chicken and can all be easily prepped the night before or day of - whichever fits your schedule best!   

 

 

The best part {in our opinion} about this delicious recipe is that you can easily customize the toppings to whatever you are in the mood for.  

 

A Few of our Favorite Toppings for White Chicken Chili

 

  • Sharp Cheddar – freshly grated, of course 

  • Chives  

  • Sour Cream 

  • Crunchy tortilla chips 

  • Corn Bread 

 

We recommend serving your freshly made chili straight from the Dutch oven or slow cooker and having your toppings lined up in small bowls for a build-your-own white chicken chili bar. It’s a fun way to make a weeknight dinner feel extra special and allows for everyone to customize their dinner.  

 

White Chicken Chili  


Serves 6 – 8 
 
Ingredients:

  • 4 boneless, skinless chicken breasts  
  • 8 cups of chicken stock 
  • 1 clove of garlic, minced 
  • 1 medium onion, diced 
  • 2 (15-ounce) can of white beans, drained  
  • 1 (4-ounce) can diced green chilis, with liquid  
  • 1 teaspoon dried oregano  
  • 1 teaspoon ground cumin  
  • ½ teaspoon chili powder  
  • 1 teaspoon salt  
  • 1 teaspoon ground black pepper 
  • 1 teaspoon chopped fresh oregano 

 
Instructions: 

  1. Add chicken to a 4-quart, heavy-bottomed Dutch oven or stockpot over medium heat.
  2. Add chicken stock and cook until tender, about 15 minutes.
  3. Shred chicken and add back to the liquid. 
  4. Add garlic and onion to pot, white beans, green chilis, dried oregano, cumin, chili powder, salt, pepper, and chopped fresh oregano.
  5. Stir until well-combined.
  6. Taste for flavor and adjust to your preference.  
  7. Simmer over low heat for about 5 minutes.
  8. Remove from heat and serve with your favorite toppings like sour cream, chives, and corn chips!
