Sausage and Corn Chowder Recipe

The evening before Thanksgiving, our family gathers at the Johnson house for Chop Night, one of our favorite nights of the year. Chop Night is a casual time to chop, season, brine, and prepare food for the next day’s Thanksgiving dinner. One of our favorite dishes to make for Chop Night is Sausage and Corn Chowder.  

Our favorite recipe for cozy Sausage and Corn Chowder is packed with sausage, tender corn, delicious potatoes, and {the perfect} amount of creamy goodness. It’s the perfect dish for casual gatherings, gamedays, or weeknight get-togethers, and easy enough to whip up in a large batch. 

 

A Few Key Ingredients: 

 

  • Mild Sausage –If you prefer a spicier bite, you can substitute medium or spicy sausage.  
  • Red Potatoes – Small red potatoes add a tender bite to the chowder.  
  • Cream Corn – Using cream corn in addition to whole kernel corn makes the chowder even creamier.  

 

We recommend serving your Sausage and Corn Chowder straight from the pot in small bowls with matching or complementary spoons. Pair the chowder with a slice of warm Pumpkin Seed Cornbread or Beer Bread on top complete the meal.

 

Sausage and Corn Chowder Recipe 

 

Serves 5-6 

Ingredients   

  • 1 Pound mild bulk sausage  
  • 1 Large onion  
  • 3 Large red potatoes, peeled and cubed  
  • 2 Teaspoons salt  
  • 1/2 Teaspoon pepper  
  • 1 Teaspoon dried basil  
  • 2 Cups water  
  • 1 17oz can cream style corn  
  • 1 16 1/2oz can whole kernel corn, drained  
  • 1 12oz can evaporated milk 

 

Instructions  

  1. Shape sausage into a large patty and brown for 5 minutes on each side in a large skillet.  
  2. Drain off fat and break sausage into pieces 
  3. Put sausage pieces into a soup kettle and return 2 tablespoons of fat to skillet and sauté onion.  
  4. Add onions, potatoes, salt, pepper, basil and water to soup kettle. Cover and simmer for 15 minutes  
  5. Stir in corn and evaporated milk. Cover and heat thoroughly.
