Hot Lemon Artichoke Dip Recipe

A Few Key Ingredients for Hot Lemon Artichoke Dip

 

A Few Key Ingredients: 

  • Artichokes – Artichokes give the dip its signature savory yet tangy flavor. 
  • Shallots - Adding shallots adds depth of flavor and a subtle hint of onion-y sweetness to the dip. 
  • Lemon pepper – A seasoning blend of ground black pepper and dried lemon zest, this enhances the citrusy taste of the dip.  

 

Hot Lemon Artichoke Dip

Serves 6 

Ingredients:  

  • 2 cans Artichoke hearts, water packed, drained
  • 1 tablespoon Shallot, finely minced  
  • ½ teaspoon Crushed pepper flakes  
  • ½ teaspoon Salt ½ teaspoon Garlic Powder 
  •  ½ teaspoon Lemon Pepper, freshly ground if possible  
  • 2 teaspoons Lemon juice, freshly squeezed  
  • 1 cup Mayonnaise, light or non-dairy  
  • 1 cup Parmesan cheese, grated, ⅓ cup reserved for the top  
  • 1 tablespoon Italian Parsley, chopped fine  

Instructions: 

  1. Preheat oven to 350F degrees 
  2. Prepare a 9" x 9" or 9 x 13" ovenproof dish by smearing a generous teaspoon of olive oil on the bottom to prevent sticking.  
  3. Drain the artichoke hearts in a colander, and use a paper towel to gently squeeze and dry them completely.  
  4. Chop them roughly into bite-size pieces and place in a medium-sized bowl.  
  5. Add the minced shallot, red pepper flakes, salt, garlic powder and pepper to the bowl, as well as the lemon juice and mayonnaise.  
  6. Add the Parmesan cheese and the chopped parsley, and stir to combine.  
  7. Spoon the mixture into the prepared baking dish and top with the reserved Parmesan cheese. 
  8. Bake for about 25 – 30 minutes, until heated all the way through. 
  9. Finish the dish by turning the oven OFF and the broiler ON for 3-6 minutes on the middle rack of your oven to brown the top of the dip. 
  10. Remove from oven and serve with crackers, bread and cut vegetables.

    • Tortilla or pita chips {plain and flavored usually work well} 

    At a casual yet elevated gathering, like a card game night or football game watch party, this dip can be served hot out of the oven, set down on a trivet where guests can dip their bread, crackers, or vegetables into as they gather around the dish.
