Pineapple and Cheese Casserole Recipe
What do you get when you put pineapple, crackers, and cheese in a casserole? A delicious, sweet, and salty dish that's sure to please even the pickiest of palettes. {Believe it or not!} This not-so-traditional casserole is a staple in our homes, especially for Spring and Summertime gatherings with our nearest and dearest.
A Few Key Ingredients:
- Pineapple chunks – These sweet and tangy bites give the recipe its namesake.
- Ritz cracker crumbs – Golden and buttery cracker crumbs add an extra crunch to the casserole.
- Sharp cheddar cheese – The sharpness of cheddar cheese helps balance the sweet nature of this casserole.

When transferring from oven to table, we make sure to put down a trivet to protect the surface from the hot pan or dish, and lay out a serving spoon or serving fork right next to it. If serving as an appetizer, set out a few salad plates, which are the perfect size for a portion of this casserole.
Pineapple and Cheese Casserole
Serves 4, Yields 1 small casserole
Ingredients:
- 1 - 20 oz can of pineapple chunks in unsweetened juice
- 1/2 cup of sugar
- 3 tablespoons flour
- 1 cup of shredded Sharp Cheddar Cheese
- 1/4 cup butter, melted
- 1/2 cup Ritz cracker crumbs
Instructions:
- Preheat oven to 350 degrees
- Drain pineapple reserving 3 tablespoons for juice
- In a small bowl, mix sugar and flour.
- In a separate bowl, combine melted butter and cracker crumbs.
- In a greased 1-quart baking dish, layer pineapple, flour mixture, shredded cheese and top with cracker crumbs.
- Bake for 20 to 30 minutes and serve hot.
