Grilled Flank Steak, Charred Corn and Avocado with Simple Herb Sauce
2 pounds flank steak
8 ears of yellow corn, shucked
3 medium avocados, cut in half and sliced thin
1 cup scallions, sliced thin
1 cup feta cheese, crumbled
1⁄3 cup extra virgin olive oil
2 cloves garlic, minced
2 tablespoons red wine vinegar
1⁄3 cup low sodium soy sauce
1⁄3 cup honey
freshly ground black pepper
Simple Herb Sauce:
To make, combine ingredients in food processor.
1 cup plain greek yogurt
2 cloves of garlic
juice of 1 lemon
1 1⁄2 cups basil and dill leaves
freshly ground salt and pepper to taste
Combine all marinade ingredients. Pour over flank steak and marinate for about two hours. When ready, heat grill on medium to high heat and sear steak for about eight minutes on each side. Remove from grill and set aside to rest for 10 minutes.
