Grilled Flank Steak, Charred Corn and Avocado with Simple Herb Sauce
Ingredients:
FOR THE STEAK AND VEGGIES:
- 2 pounds flank steak
- 8 ears of yellow corn, shucked
- 3 medium avocados, cut in half and sliced thin
- 1 cup scallions, sliced thin
- 1 cup feta cheese, crumbled
FOR THE MARINADE:
- 1⁄3 cup extra virgin olive oil
- 2 cloves garlic, minced
- 2 tablespoons red wine vinegar
- 1⁄3 cup low sodium soy sauce
- 1⁄3 cup honey
- freshly ground black pepper
FOR THE HERB SAUCE:
- 1 cup plain greek yogurt
- 2 cloves of garlic
- juice of 1 lemon
- 1 1⁄2 cups basil and dill leaves
- freshly ground salt and pepper to taste
Instructions:
FOR THE HERB SAUCE:
- Combine ingredients in food processor.
FOR THE MARINADE:
- Combine all marinade ingredients.
- Pour over flank steak and marinate for about two hours.
FOR THE STEAK AND VEGGIES:
- When ready, heat grill on medium to high heat and sear steak for about eight minutes on each side.
- Remove from grill and set aside to rest for 10 minutes.
- Place fresh corn on hot grill and char on all sides. Remove and cool.
