Creamy Potato Soup is something that my mother Linda always made for me when I was a child...
Traditionally, we would eat it while watching one of the Christmas shows that came on only once a year like Frosty, Rudolph or Charlie Brown Christmas. Other times, mom would make it without our asking when we were not feeling well and needed some TLC! It was always made and served with love and one of the many fond food memories I have of growing up surrounded by orange groves in Weirsdale, Florida. You'll find the recipe for my Creamy Potato Soup on page 134 of The Happy Everything Cookbook. It is the perfect pairing for these yummy sandwiches...
Prosciutto, Pear & Blue Cheese Sandwiches with Fig Jam have all the yummy tastes you love and associate with the Christmas Season... oven toasted artisan bread smeared with soft butter, sweet honey, peppery arugula, a dab of Dijon, salty prosciutto, creamy blue cheese and slices of ripe pear... topped off with homemade fig jam!
