In a few days, we'll be packing up the car and heading to the beach for the holiday weekend. When it comes to the whole family at the beach (12 of us plus our four-legged babies!), things can get pretty hectic, pretty quickly! FUN, but hectic. Over the years of family beach weekends, we've developed a few different procedures that help with the chaos that can be 12 people in one beach house. One of which is meal planning. Our guide to meal planning has made traveling and meal prep a breeze, so I thought I'd share it with y'all in advance of the holiday weekend.
A few days prior to the trip, my niece emails a meal sign up sheet around. My sister and I sign up to cover the dinners for the week, and between her girls and my girls (we each have three) they each sign up to make an appetizer, or two, for the week. They have so much fun trying new recipes and sharing them with group. My mom always handles breakfast, and we all tackle lunches as a team. We're normally on the boat at lunch time, so after breakfast, we all work together - assembly line style - to make sandwiches and our favorite dip for chips to bring along for the boat ride. The boys are always in charge of getting ice and packing the coolers with drinks for the day.
Because each person is responsible for bringing the ingredients for their dish as well as preparing it, this eliminates one person from spending their entire vacation in the kitchen cooking all the meals for the group. The girls in our family really love to cook, so each trip inevitably ends with a recipe swap from that trip's menu.
