Kyle on: Artichokes For Two


One of my goals this year was to spend more time in the kitchen, and it’s been so fun trying new recipes and finding favorites that Warren and I both love! After OBSESSING over the grilled artichokes from Houston’s, our go-to restaurant when at AmericasMart for wholesale markets, I knew I had to attempt a version to recreate in my kitchen.

These are a great appetizer to snack on while were waiting on the rest of dinner to cook. Our medium plank square casserole dish (found here) is the perfect size for artichokes for two. Happy baking!

Here is what you will need:

2 Large artichokes

Italian dressing {my favorite is Good Seasons!}

3/4 cup of mayonnaise

Juice of 2 lemons

Fresh ground pepper

Kosher salt


1. Bring a large stockpot to a boil

2. Snip the sharp tips of the artichoke leaves with kitchen shears

3. Add trimmed artichokes to pot and boil for 25-30 minutes {or until stems are fork tender}

4. Remove artichokes and let cool

5. Once cool, cut in half lengthwise

6. Scoop out the center choke {the fuzzy part} with a spoon

7. Set artichokes in casserole dish

8. Pour Italian dressing to coat the artichoke halves making sure to layer in between the leaves for full coverage

9. Sprinkle with salt and pepper

10. Broil artichokes {be careful to watch so they don't burn} until the tops are brown and crispy

11. While the artichokes are broiling, whisk together the mayo, lemon juice and pepper in a small dipping bowl

12. Remove artichokes and serve with dipping sauce
